Sodium alginate
Sodium alginate (sodium salt of alginic acid), is extracted from red and brown algae.
Appearance: cream to light brown powder, highly soluble in water. It has the ability to retain moisture well, and, in fact, is a gelling agent used as a thickener, stabilizer, moisture-retaining agent, gelling agent, and as an encapsulating agent.
